Pumkin chip muffins

Ingredients:
*4 eggs
*1 1/2 cups sugar
*1 can (16 oz) pumpkin
*1 1/2 cups veg. oil or 1/2 cup oil and 1 cup applesauce
*3 cups all-purpose or whole wheat flour
*2 tsp. baking soda
*2 tsp. baking powder
*1 tsp. cinnamon
*1 tsp. salt
*2 cups semi-sweet chocolate chips
*1 cup chopped or ground nuts (optional)
Directions:
1: In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth.

2: Combine flour, baking soda, baking powder, cinnamon, and salt. Add to pumpkin mixture. 

3: Fold in chips and nuts. Fill greased muffin cups; evenly divide among 24 cups.

4: Bake at 400* for 16-20 minutes or until muffins test done (insert tooth pick). Cool in pan 10 minutes before removing to wire racks. 




Yields 24 muffins... they do not last long!
Especially yummy when mom reads aloud in the afternoon, and everyone sits in the living room with a cup of tea and a muffin...:-)
