This yummy recipe is from kellishouse.blogspot.com -- any recipe I have made from her always turns out fantastic! These are no exception...
I make them often for our Wednesday night home group at church. They are raved about and disappear quickly!
Note: The recipe is for an 8x8" pan. I usually double these for a 9x13" pan.
Ingredients:
1 cup all-purpose flour
1 cup quick oats
2/3 cups brown sugar
1/4 teaspoon baking soda
1/8 teaspoon salt (I add this)
1/2 cup = 1 stick butter (Tip: save the paper from the butter to use for greasing the pan!)
1 cup of your favorite jam! (We have used apricot jam, strawberry, blueberry, raspberry...)
In a mixing bowl combine flour, oats, sugar, soda, and salt. Cut in butter until mixture resembles coarse crumbs. Reserve 1 cup of the flour mixture. Press remaining flour mixture into the bottom of a greased 8x8 pan. Spread with desired jam. Sprinkle with reserved flour mixture. Bake at 350 for 30 minutes or until the top is golden. Cool completely before cutting into bars (if you do not allow to cool, they are very crumbly and hard to dish out).
